Meet the Chef Eugenio Cannoni
Chef Eugenio 's culinary journey began in his family's restaurant in Piedmont. Eager to expand his expertise, he attended Alma di Gualtiero Marchesi, one of Italy’s premier cooking schools. His quest for culinary excellence led him to various prestigious kitchens across Europe and the world, enhancing his skills and knowledge along the way. His impressive career includes roles as Head Chef at the Michelin-starred Moss Restaurant at the Retreat Hotel in Iceland, Chef de Cuisine at La Scala restaurant at the Sukhothai Hotel in Bangkok, and Chef de Cuisine at the Michelin-starred Restaurant of Hotel Ca' Vittoria. In Shanghai, he blends culinary inspirations from the four places of his career path—Italy, Thailand, Iceland, and China—using modern techniques to create dishes rooted in the flavours of Northern Italy.
