Dining

With its sky-high harbour views and sleek, modern Philippe-Starck-designed interiors, Felix has long been one of The Peninsula Hong Kong’s most visually striking dining destinations. Thanks to the creative ingenuity of Chef de Cuisine Aurélie Altemaire and Head Mixologist François Cavelier, the restaurant has also become a hotbed of culinary innovation.

Chef Aurélie delights in showcasing the freshest seasonal ingredients from around the world – Patagonian toothfish, Iberian pork, Japanese oysters – in imaginative and deeply flavourful dishes. These can be paired with François innovative cocktails, which embrace both deliciousness and ground-breaking sustainability.

Meet The Chef Aurélie Altemaire

Lauded for both her exacting standards and innovative artistry, Chef Aurelie brings more than two decades of culinary accomplishments to her new role at Felix. Her career has spanned three continents, and has included posts at numerous Michelin-starred restaurants – including Le Bristol in Paris and a nine-year stint as Head Chef at L’Atelier de Joel Robuchon, in London.

At the young age of six, Aurelie found her fascination for gastronomy when she cooked at home for her elder sister. Since then, she has kept that fascination alive and further developed her creative and inspired cuisine by drawing inspiration from her many travels.
