A Legendary Dining Institution Marks Another Milestone

One of Hong Kong’s most cherished and long-standing dining institutions, Chesa, marks its 55th anniversary this August in classic Swiss style with an imaginative menu and a traditional contest. The much-loved eatery – famed for its inviting alpine lodge décor and hearty yet refined cuisine – has been a favourite among locals and visitors since it opened at The Peninsula Hong Kong in 1965.
To commemorate over half a century of proud traditions and culinary excellence, The Peninsula’s Swiss-born Group Executive Chef Florian Trento is teaming up with Chef de Cuisine Lo Wing Keung to create a series of enticing gastronomic journeys. Four unique Chesa 55th Anniversary Menus inspired by the linguistic and cultural diversity of Switzerland will be presented on rotation during August.
24 – 30 August La Suisse Romande en Fête (Swiss French)
31 August – 6 September Grüess us de Dütsche Schweiz (Swiss German)
7 – 13 September Saluti della Svizzera Italiana (Swiss Italian)
14 – 20 September Or’d La Swizzra Romontscha (Swiss Romansch)
Signature birthday dishes include Salmon fillet pan-fried in brown butter with onions, chive potatoes and creamed spinach (Swiss French) and Beef carpaccio with pine seeds, caper berries and mountain cheese (Swiss Italian). To add an extra touch of Swiss hospitality, the serving staff at Chesa will be dressed in traditional Edelweiss shirts. A live accordion player will enhance the ambience with traditional tunes on 27 August, the date of Chesa’s 55th birthday.
To further commemorate the occasion, Chesa is inviting guests to participate in a contest based on an old tradition from the Appenzell region of northeast Switzerland. From 24 August to 20 September, diners who ordered the anniversary set dinner menu will be offered the chance to take the Talerschwingen Challenge, which involves spinning a coin in a distinctive Swiss bowl for as long as possible. Each week, the guest with the highest score will win a Chesa set lunch with a glass of house wine for two persons. On 21 September, the four leading weekly contestants will go head-to-head for the chance to win round-trip flight tickets courtesy of SWISS airlines, and a one-night staycation at The Peninsula Hong Kong with daily breakfast for two persons.
Group Executive Chef Florian Trento says: “Being from Switzerland, I am particularly proud that The Peninsula Hong Kong has such a renowned Swiss restaurant as Chesa. The restaurant has remained popular for 55 years, which is testament to the authenticity of the experience and to the tremendous attention to detail that goes into every Swiss dish. This is something we have tried to highlight with the 55th Anniversary Menu, which I hope will delight regulars and newcomers in equal measure.”
Meaning “house” or “inn” in Romansch – Switzerland’s fourth official language after German, French and Italian – ‘chesa’ is a common name for restaurants in Switzerland. And although this ‘chesa’ is a long way from its home country, it was a perfect fit for The Peninsula Hong Kong when it opened in August 1965, as the hotel’s staff at the time included 17 Swiss managers and chefs.
Available from 24 August to 20 September 2020 and served for dinner period, the Chesa 55th Anniversary Menu is priced at HK$ 780* per person, or HK$1,260* per person with a four-glass wine pairing. Diners will also receive a special Chesa tumbler as a memento. Guests booking the Chesa 55th Anniversary Menu on or before 10 August will enjoy a special rate of HK$750* per person with a glass of Swiss beer or a Chesa signature cocktail.
