Chef Lo Wing Keung, Chef de Cuisine at The Verandah, Chesa and Room Service at The Peninsula Hong Kong has been with the hotel since 1994 and Chef de Cuisine since 2009. He started his career in food and beverage as a kitchen helper at the Hilton Grill Room in 1983, and then worked as Senior Cook of Pierrot at The Mandarin Oriental, followed by Nicholini's Chef de Partie at The Conrad. In 1991, he moved back to Pierrot as No. 1 Cook and in 1994, held the place of Jr. Sous Chef at Nicholini's before joining The Peninsula Hong Kong as the Section Head Cook in Gaddi's. He was then promoted to Gaddi's Sous Chef in 2000. Chef Lo led the team in the Banquet Kitchen as Chef - Banquet in 2008, and in 2009, was promoted to Chef de Cuisine - The Verandah, Chesa and Room Service.
Chef Lo describes his culinary style as a combination of the traditional and the innovative. Throughout his career, he had many opportunities to work with great chefs from around the world, and through observation and practice, was able to incorporate his findings to create his personal style by exploring new cooking methods and utilising an array of special ingredients. "Innovation is vital for chefsand finding ways to delight guests' palates really makes me happy," says Chef Lo. Beyond the kitchen, Chef Lo enjoys outdoor activities on sunny days such as hiking or other activities which allow him to embrace the beauty of nature.
