Tempura Kondo is a sought-after spot that has hosted many foreign celebrities over the years. Here, the master tempura chef can be watched at work, mixing the batter, and frying the ultra-fresh seafood and vegetables in sizzling peanut oil. A number of courses and sets are offered, the tempura being complemented with delicious sashimi dishes. Extras can also be ordered à la carte. The signature dish of Tempura Kondo is fried sweet potato, which should be ordered early as it takes a while to prepare.

Existing since 1954, Tempura Yamanoue prides itself with their silky-light tempura batter which is known to enhance the flavour of the ingredients they use. The traditional taste of this Edo-style tempura has been continuously praised by guests since its founding and the new restaurant in Ginza allows them to gain a bit more flair and a whole new world of taste to enjoy. They use two different types of sesame oil which has been blended to perfection.

Hidden in the Ginza streets, this tiny yet high-class restaurant should be reserved in advance by anyone hoping to taste its classic tempura. Like a top-end sushi restaurant, Tempura Masa serves Omakase courses to guests who sit around the small counter in the cosy interior to watch the chef. Individually-cooked dishes—succulent oysters, fresh vegetables, crunchy shrimp heads and more—are reverently presented one at a time.

With over 20 years of experience, Tempura Onodera’s executive chef Hiromichi Ishii honed his skills in high-end hotels before becoming a sous chef in one of the top Tempura Restaurants in Japan while only in his early 20s. They offer different seasonal vegetables and seafood fried in the highest quality of pure white sesame oil. While adhering to the traditional cooking techniques, Chef Ishii recommends the dining style of “Cham-pura” which is a term used to enjoy tempura whilst having champagne.

An intimate tempura house tucked away in the back streets of Aoyama, this restaurant specialized in Kansai-style offerings, meaning lighter and milder ingredients fried in sunflower oil (instead of the sesame version used in Kanto tempura). Opened almost a half-decade ago, the chef ensures that only the freshest seafood and vegetables are served and don’t take the course meals too lightly as the portions may seem small but the number of dishes in the end will always leave you happy and satisfied. Master chef Isao Kanemasa has mastered the tempura frying style for decades, so you are definitely in great hands.

The austere, quiet refinement of the interior instils a feeling of peace. Yoshiaki Shimizu’s passion for tempura is inherited from the style of his mentor. Sparingly battered foodstuffs are fried in freshly pressed sesame oil to bring out their flavours. Two tiger prawns are served in succession, the first to convey the sweetness of the shrimp, the second, served almost raw, to highlight the difference in flavour. Pairing tempura with French wine is another unique touch.
