The Peninsula Paris debuts exquisite flower-themed cakes for the holiday season

Inspired by Mother Nature, the delectable creations of pastry chef Anne Coruble enchant winter patrons at the legendary palace hotel

As it does each year, The Peninsula Paris has introduced a pair of magnificent holiday cakes from its renowned culinary team, available for order in time for the festive season. Conceived by the hotel’s award-winning pastry chef Anne Coruble, this year’s traditional Christmas Yule log and Twelfth Night cake take their inspiration from blooming garden flowers.

 

A Delicate “Snowdrop” Bûche de Noël

Chef Coruble’s Christmas Yule log is a breath-taking aesthetic tribute to the snowdrop, a fragile white flower that blossoms in the coldest months of winter. The cake faithfully echoes the delicate shape of a snowdrop bloom, with three elegant chocolate petals, filled with Piedmont hazelnut praline, enclosing the main form of the Yule log. The log itself is a sumptuous composition of creamy marbled vanilla-hazelnut, Creusois biscuit, and crunchy roasted hazelnuts with black cardamom, modelled in the likeness of an upright Christmas tree.

Accompanied by black cardamom-infused buttermilk , along with a stracciatella of Peruvian chocolate and a fleur de sel-smoked praline, this Yule log makes an unforgettable finale to any holiday feast.

 

A Delightful “Floralie” Twelfth Night Cake

Another delicious creation from Chef Coruble is her splendid, flower-inspired tourbillon cake – which heralds the Twelfth Night holiday, and also (more subtly) the 2024 tenth anniversary of The Peninsula Paris.

Crafted in the shape of a ten-petalled bloom, the cake is made from puff pastry infused with essences of hazelnut and lemon zest. The filling comprises a frangipane cream made from roasted almonds, Lucerne honey from Normandy, and Peninsula honey cultivated in the hives of the hotel’s gardens. The ten overlapping petals of the cake’s design are a nod to the ten years that The Peninsula Paris has welcomed guests to its grand palace on Avenue Kléber.

The cake comes paired with a caramel made of Marais honey, and a Tahitian vanilla Isigny cream with marigold flowers. Each limited-edition cake has also been baked with a secret good-fortune charm inside, for one lucky holiday guest to discover.
