Fun, guided workshops offer hands-on learning about Parisian cuisine, and a behind-the-scenes glimpse into the storied hotel’s kitchens

Discerning diners have long savoured the gourmet cuisine offered by The Peninsula Paris’s award-winning chefs. Now, and for the first time, food enthusiasts are invited to join – and learn from – members of the legendary hotel’s culinary team. To launch The Peninsula Academy, a new collection of immersive programmes for guests, the Avenue Kléber palace will offer a series of special food-related workshops this summer.

Participants in these Peninsula Academy offerings will get the chance not only to interact with the hotel’s culinary stars right in the kitchens where they work, but also to learn some of the secrets behind their signature creations. The programmes include a tour of the hotel’s rooftop vegetable garden with Executive Chef David Bizet, wine-tasting with Chef Sommelier Florent Martin, a dessert-making class with Pastry Chef Anne Coruble, and a Dim Sum-making workshop with LiLi Chef Tak Lau Yuen.

Rooftop Garden Tour and Michelin-Starred Lunch

Tucked away on The Peninsula Paris rooftop is a small green oasis, where the hotel’s chefs grow a variety of herbs and edible flowers for their culinary creations. A special Peninsula Academy experience lets guests learn about these ingredients, and sample some of them, alongside Executive Chef David Bizet – whose own Michelin-starred cuisine spotlights fresh and locally grown produce. After exploring the garden, participants can enjoy some of Chef Bizet’s exquisite dishes with an elegant lunch at L’Oiseau Blanc, the top-floor restaurant that takes French gastronomy to new heights. The Chef Sommelier and his brigade will also offer a selection of wines during this memorable lunch, pairing with the fine cuisine of Chef Bizet.

Wine Tasting and Education

Learning about French wines from a true connoisseur offers a vivid, and delicious, window onto some of the country’s oldest and most cherished traditions. With this Peninsula Academy offering, guests will get to enjoy that privilege with the hotel’s Head Sommelier, Florent Martin – who in 2020 and 2021 was awarded the coveted title of Best Sommelier in France by Sommeliers International.

The experience includes a guided tasting of four French wines selected by Mr. Martin, along with accompanying light bites. Guests will learn about the wines’ distinctive characteristics, terroirs, and histories, and also how different wine varietals can form the foundation of different dining menus when cooking at home.

Dessert-Making and Afternoon Tea

This programme invites guests to don chefs’ aprons and join The Peninsula Paris’s award-winning Pastry Chef, Anne Coruble, for an afternoon of dessert-making and sampling. The adventure starts in The Peninsula kitchen, where Chef Coruble will share the secrets behind some of her signature creations – such as hazelnut spread, crunchy double-chocolate cookies, and soft sugared brioche dough. After their cooking class, participants can gather at Le Lobby for classic Afternoon Tea, which menu includes many of Chef Coruble’s sweet creations.

The Delicious Art of Dim Sum

Fans of Asian cuisine can delve into the enticing world of Cantonese cookery with this hands-on workshop, hosted by Chef Tak Lau Yuen of LiLi restaurant. Chef Tak will give guests step-by-step instructions in the making of traditional dim sum – including classic steamed dumplings like ha kao (shrimp) and siu mai (shrimp, poultry, or vegetable), and char siu bao (barbequed pork on steamed brioche buns). After the lessons, guests can gather at the Table des Chefs in the LiLi kitchen to sample dim sum along with an accompanying glass of wine or Champagne.
