This intriguing, vibrant shophouse is the brainchild of Mumbai-bred, Noma-trained, former Gaggan sous chef Garima Arora, fusing Indian and Thai flavours across delicately crafted tasting menus. Mod techniques meet trad methods in what is set to be one of the hottest openings of 2017.

The once-abandoned, bright yellow building, with its contemporary metal and glass facade extension, sits opposite Gaggan, chef Gaggan Anand’s progressive Indian eatery which was crowned number 1 for the third year running in Asia’s 50 Best Restaurants list for 2017. But whereas Gaggan is famous for its 25-course degustation, Gaa offers a choice of two shorter tasting menus – eight or 12 courses – celebrating delicious, organic local produce with innovative, international dishes made from scratch. Think spice-rubbed, coal-grilled young corn with corn milk dip; poached grouper (wrapped taco-style with crunchy Southern Thai-inspired crepe floss); crayfish with jungle fruit and pomelo; and pork ribs marinated with split-pea miso served with pomegranate, onions and shallots.

Save room for desserts, from turmeric soft serve in a sesame cone topped with safflower (health-boosting turmeric is so hot right now!) to platters of arty, choc-coated treats inspired by Indian sweets. Pair food with wine, house-made kombucha or fresh juices.

Contrasting with the bold exterior, interiors are softer, with elegant, Mid-Century-style wooden chairs, purple leather sofas and industrial-chic details set against minimal, mural-decked stone walls. All eyes are on the prettily prepped plates for a reason!
