The Mastery of Chocolate

Up-and-coming pastry chef and chocolatier Kazuaki Eguchi has always been restlessly devoted to honing his skills; after gaining experience in reputed establishments like Tokyo’s Le Chocolat de H, he flew off to train at the famous Del Rey chocolaterie in Antwerp, before returning to the Nippon capital to helm its local flagship. Fast-forward to today, and he has opened up his very own 22-seat patisserie and café Del’Immo, where he’s concocting a seasonal choco-centric range of decadent truffles and intricate pastries with globally-sourced, quality cacao beans.

Feast your eyes on Eguchi’s expertly prepared petits gateaux like the ‘Marie’ (a white chocolate mousse cake with a pistachio biscuit, and strawberry and rhubarb compote filling) lined up across the marble-top display counter that spans the vibrant green-hued store. Or head to the the intimate wood-panelled tea room at the back to grab a banquette and one of his fluffy, thick pancakes with toppings like bananas, whipped cream and chocolate chips, and creamy parfaits layered with in-season berries and paired with a 76% dark hot cocoa (with optional baguette or biscuits for dunking) and a choice selection of Ronnefeldt teas from Germany. Del’ectable!
