12 Seats, 20+ Courses

Once a second-rate dining destination across the river from Manhattan, Brooklyn has recently welcomed a barrage of restaurants well worth crossing the bridge for. And with the June unveiling of Blanca, the now Michelin-starred 12-seater tucked within popular Bushwick pizza joint Roberta’s, all the Manhattanites stowed their misgivings for a chance to perch on one of the coveted stools. Serving a 20-30 course, prix-fixe dinner four times a week, and with bookings secured within seconds of release, Blanca has become one of the hottest (not to mention hardest to get) tables in the city.

And rightly so – as chef Carlo Mirarchi turns out pared-down, perfectly-executed dishes that focus on seafood and meat, with standouts like the sweet geoduck clam with Tuscan melon, Wagyu carpaccio with summer truffle, and ‘Nduja raviolo among many others. Courses range from bite-sized to several mouthfuls-worth, but Mirarchi tempers the sequence and the balance between heavy and light textures and flavours, as is necessary for a dinner that lasts 4 hours. Plus, since all 12 seats are arranged around the open kitchen, visitors remain captivated with each course in its creation. For foodies, a night in this sparkling clean, sparsely decorated eatery is nirvana – but book well ahead.
