Cutting Edge Korean

Hong Kong boasts no lack of cheap and cheerful Korean diners, typically centred around the smoky barbecue grills that their cuisine is so famous for. But if you’re in search of a more sophisticated dining experience, the kind that touts delicate flavours, and more importantly, that doesn’t leave your coiffure and clothes coated in a layer of cloying grease, the options are rather more limited. Then, as if in answer to our hair prayers, along came Sanche, a modern Korean concept in Central that uses only fresh ingredients from local suppliers and sources its traditional Jang sauce directly from an artisan producer in Korea… and without a charcoal grill in sight!

The mostly classic fare has been pared back and is presented in a small plate format, such as small chilli peppers stuffed with minced beef and coated in a light tempura, delicate slices of pork belly simmered in spices and served with a generous flourish of fresh-made kimchi, and seriously spicy Korean Fried Chicken served with a spicy gochujang sauce. Cocktails pack a flavour punch too – Green Joy is made with rum, honeydew melon and a good kick of kaffir lime – and if you just can’t get enough of their house-made pickles, they mix up a mean Kimchi Bloody Mary. Gunbae!
