Osborn’s Mod Euro Fare

Aussie chef Shane Osborn sports quite the impressive resume. Not only did he have a pivotal role in winning London fine-diners Pied à Terre and L’Autre Pied their Michelin stars, he was also brought in to give Hong Kong’s St Betty a much-needed culinary revamp. No great surprise, then, that when Osborn unveiled Arcane – his newest project in the Fragrant Harbour – discerning epicures lined up to sample his modern take on European fare.

Set over a simple, sophisticated 2,000-sq-ft space of polished oak floors, crisp white linens and floor-to-ceiling windows, Arcane delivers a punchy, seasonal menu that often employs the garden-fresh herbs, fruit and vegetables that have been grown on the restaurant’s terrace. The varied and luxuriant fare on offer includes sauteed langoustine with pork belly, sweet garlic puree, pine nuts and balsamic jus; and steamed wild Suzuki sea bass with roasted carrot oil, sunflower and rapeseeds, and chervil root; while sweet-tooths can rhapsodize over the Manjari chocolate tart with Guinness ice-cream and shaved macadamia nuts. Pair that with a global pour from their 1,200 bottle-strong cellar, such a red Burgundy, and you’ve got the full Osborn experience.
