In this city, full to the martini-glass brim with sip spots that run the gamut from the velvet-roped to to the demure, bar owners are forced to think somewhat outside the box when trying to entice the locals with something new.

For Jared Mort, this inspiration came in the form of a Louisiana townhouse – which he had deconstructed, trucked over to downtown LA, and reconstructed with the view to transport his patrons to the Southern days of yore.

Bluesy bands delight ‘til dawn in this playfully nostalgic nook, with genuine era-décor from soda-fountain bar stools to a taxidermy bear setting the scene – even the loo has a quirky pull-flush.

The cocktails too boast a Southern twist, with classics like Mai Tais and Manhattans poured into an oak barrel and left to simmer until just the right moment, while above the bar, a vintage carousel once used to hang-dry garments is now replaced with bottles of richly-coloured and aged bounty.

If you’ve sampled all seven, then try the ‘build a buck’ with your choice of spirit mixed expertly with ginger beer, and for light bites, Cajun staples like jambalaya and sweet potato pie are homemade just like in Louisiana. In cocktail-saturated LA, Sassafras is a welcome respite, and a sweet, satisfying taste of the South.
