One Pot

Although Beijing offers no shortage of solid Korean options, chef Andrew Ahn’s popular venture Ssam with its innovative takes on Korean classics was held in particularly high regard, so it was with shock and dismay that patrons had to wave goodbye to the surprisingly shuttered restaurant in July last year. But wait… with little warning Ahn is back, and he’s occupying the same Sanlitun Soho space but with a new concept, and under a new name: One Pot. Now a bright, casual space of polished concrete floors and white wooden tables, the emphasis is no longer on overly-elaborate, long-monikered creations, but instead the concept has been pared-back to reflect simple but creative iterations of Korean street food.

Of his newer renditions, probably the most popular standout dish is the beer can chicken: a whole bird that’s been marinated in cherry beer then simultaneously roasted and broiled for almost an hour using a curious funnel-like device. His topokki stew is also inventive with thick sticks of rice flour stuffed with mozzarella then simmered tableside in sauces like spicy red pork and sweet pumpkin. Then for dessert, Ahn’s crunchy, soju-infused tiramisu – a former Ssam favourite – has made a return to the menu, and is best accompanied with one of their mean cups of joe, freshly ground from beans from around the world.
