L’Atelier de Joël Robuchon

February 23, 2015
L’Atelier Arrives
With more Michelin stars to his bow than any other chef in the world (an astronomical 28, to be precise), over 50 years in the biz, and a revered restaurant empire that spans Las Vegas, London, Monaco and Tokyo to name a few, it was only a matter of time before prolific pan-handler Joël Robuchon launched his first epicurean venture in Bangkok. After a great deal of anticipation – and a few hype-heightening delays – the mod-Gallic maître has finally unveiled his exquisite fine-diner L’Atelier de Joël Robuchon at the MahaNakhon CUBE.

Globetrotting gourmands who have supped at other L’Atelier outposts will recognise the signature black and red accents centred on a counter-ringed exhibition kitchen where 30 lucky diners can graze and gaze. Similarly, the a la carte and five- or seven-course tasting menus sport a few familiar dishes such as the immaculately succulent seared sea scallops set on a kumquat reduction, and salmon tartare crowned with Imperial caviar. Nonetheless, executive chef Olivier Limousin is also incorporating locally-sourced ingredients along with novel Asian flavour inflections – as seen in the foie gras-stuffed quail which retains a slight salty sweetness from its soy sauce marinade. The extensive wine selection from the on-show cellar keeps things entirely classic with top French drops available by the bottle or as sommelier-selected course pairings. Magnifique.
