Tokyo Sushi Academy, or the boy band-esque TSA – to those in the know – is your shortcut to silky Japanese culinary skills, from slicing and dicing salmon to rolling nori and wrangling rice. You'll be slicing tuna like Wolverine after a lesson with this master sensei.

Yanagi-wielding pros come in from around the world for the eight-week certification course, where you can learn how to be a sushi master... from a sushi master. You’ll spend four weeks absorbing the techniques behind authentic sushi, from knife handling to raw fish preparation, finessing the art of nigiri sushi, sashimi and rolls. The second four weeks is devoted to Japanese cuisine in general, from making delicious soup stock to tempura and yakitori.


Don’t have two months to spend on the science of sushi? Us neither. Beginners can sharpen their skills with a 90-minute group workshop, guided by top-notch chefs, at atmospheric Tsukiji Fish Market, with tips on seasonality, the senses and sake. The third option is a private lesson for pros to help you brush up your skills, from working with rice vinegars to pulling off an entire sushi platter. Most classes are in English so international gourmets can tap into this trad knowledge.


Sure, you can buy a ready-made sushi bento box, but it’s way more satisfying to prepare your own at home. File under ‘dinner party wow’!
