Sparkly new shop and sup complex Toranomon Hills not only boasts lofty city vistas, but also has some thoroughly down-to-earth elements, including energy-saving design features and recycled building components. So it’s fitting that its newest tenant, bistro-cum-épicerie Pirouette, should mirror the centre’s sustainable focus with a seasonal, locally-sourced menu, and a stylish, airy space accented by raw, natural materials.

Come lunchtime, nab a perch at the elm counter for prime views of the display kitchen where chef Naoya Kobayashi and team plate up a daily changing four-course prix fixe menu. Offerings have included foraged mushroom and macaroni gratin; market-fresh fish with roasted cauliflower; and cider-soaked savoy cabbage – best paired with one of the 150+ organic and international wines. For sweets and snacks duck across to the small café that serves up salads, savoury tarts and delectable desserts including seasonal fruit parfait, homemade ice cream and tea cakes or, if you’re inspired to whip up your own eco-conscious fare at home, stop by the in-store grocer and stock up on organic veggies, artisan meats, small-batch jams and gourmet pickles. Pirouette... take a bow.
