It’s hard to believe a former ABC Sports director and producer would be the type to develop a self-proclaimed obsession with baking, but that’s precisely the ‘path less travelled’ that ensnared and subsequently propelled chef and author Maury Rubin onto his now well-noted career trajectory. Via his flagship Union Square location, The City Bakery, Rubin perfected his baking and hot chocolate making, published books (Book of Tarts, Form, Function & Flavor), launched a festival (The City Bakery Hot Chocolate Festival) and eco-friendly offshoot businesses (Birdbath Neighbourhood Green Bakery), and still found the time to expand overseas with the opening of two City Bakery outposts in Japan. Phew!
Firstly in Osaka and as of November 2013 in Tokyo too, Rubin’s City Bakery has brought to the Japanese legions the brand’s signature pastry delights, not least the famed cult product, the Pretzel Croissant, a hybrid morsel possessing a salty, flaky shell and devilishly delicious chewy centre which reportedly sold more than 1,500 units on opening day. Sharing the spotlight in the Shinagawa Station space are myriad muffins, scones, breads, cookies, beverages and deli bites sure to tempt even the most waistline conscious Tokyoites.
