Modern Cantonese Bund-side

Founded in London’s Mayfair in 2001, revered modern Cantonese brand Hakkasan has since spread its elegant reach to Miami, Abu Dhabi, Mumbai, Dubai, Doha, San Francisco, Las Vegas, Beverly Hills and, most recently, Shanghai. The first Chinese incarnation of the Michelin-starred chain is happily situated Bund-side, spread over main dining area ‘The Cage’, cocktail lounge Ling Ling (for sweeping views of the Pudong skyline), and five luxurious private dining rooms set around its periphery, all effused with Hakkasan’s signature complexion-loving blue light and dark lattice woodwork.

The menu has been designed by Michelin-starred chef Tong Chee Hwee to focus on local, seasonal ingredients, while its execution comes at the deft hand of chef de cuisine Alvin Chan. Delicately plated classics include tender salt and pepper squid; crispy duck salad with pomelo, pine nuts, shallots and a mound of fresh greens; as well as colourfully inventive dim sum including the truffle pumpkin puff, scallop siew mai, and roast duck and mushroom dumplings. Not to be overlooked are the elegant dessert offerings (like the five-spiced apple caramel with ginger ice cream and mulberries), and an edgy edit in Asian-inflected sips: the Plum Sour is a concoction of whisky, plum liqueur, lemon, lime juice and aromatic bitters, and The Hakka is mixed with vodka, sake, lychee juice, lime, coconut and passionfruit.
