From the revered, experimental chef behind long-time LUXE fave Ultraviolet, The Chop Chop Club is Paul Pairet’s new restaurant, focussed on the art of roasting awesomely juicy hunks of meat at this outside-the-box carvery concept.

Veggies beware – meat is seriously seductive here, with the French chef describing his eatery as “product driven, boldly essentialist and borderline primitive”. It aims to be a luxe but casual take on global and honest home cooking. Think bistro with attitude.

Yet in this idiosyncratic meat market, diners actually compete for the spoils, with seven or eight nightly-changing mains served at 15-minute intervals over two sittings. Like a timed auction, tables vye for the plates, with the schedule flashed up on a digital display. Order a portion, a whole main for your group, or even split one with another table. Get in quick or miss out. Chop, chop fellas!

Protein-packed treats span chargrilled chicken Américaine with lemon and garlic; vineyard chargrilled cote de boeuf with Bearnaise sauce; black pepper short rib rack with pomelo ginger; and Bertha charred oxtail teriyaki with sesame and coriander. Pescetarians can go for grilled seabass with pastis aioli and vierge, or roasted-grilled turbot. Tasty starters and sides include lettuce pancetta, asparagus, spinach sesame and mash.

At Three on the Bund, Chop’s dining lounge is swankily contempo, setting the scene for Unico club in the same space later. Meat and greet!
