To celebrate the coming of the Three Kings on 6 January, the French indulge in their famous Galette des Rois, a buttery, almond-filled puff pastry cake which can be enjoyed throughout the month. With arty chefs vying to add new and inventive fillings every year, options abound in local patisseries, but here are our absolute favourites…

This year patisserie chef Sébastien Gaudard has a choice of chocolate or almond galettes at his chic boutique/tea salon. Both include almond cream, but the former teams it with intense chocolate while the latter mixes in Martinique rum. They also feature charms of crowned figures by designer Christian Ghion (from €6 each).

Artisan chocolatier and cakemaker Jean-Paul Hévin is offering a prettily decorated Epiphany Cake of chocolate frangipane with chocolate chips made from Grand Cru cacao from Ecuador and a bold hit of vanilla (from €29.50 for 5 serves).

Fauchon’s sensual ruby-red Galette Bouche is shaped like luscious lips, formed from a fresh, light flan made with Charentes butter with fruity notes of passion and rose petal flirting with raspberries (€35 for 6-8 servings). They also do a trad almond galette filled with frangipane cream and rum (from €5.90).

Top talent Pierre Hermé’s Azur galettes combine ultra-crunchy pastry with yuzu almond cream, chocolate, yuzu ganache, and candied yuzu peel for a sweet-citrus party in your mouth (from €37 for 3-4 servings). With all Galette des Rois, just watch those teeth! A small (inedible) prize, or fève, usually hides inside one of the slices.
