Tucked away off Greenwich Avenue with not even a sign above the door, Wallflower lives up to its coy moniker on first impressions; set as it is over two dimly lit rooms of smooth marble countertops, dull gold ceilings and simple grey banquettes, you’d be forgiven for missing it completely. However this is no ordinary neighbourhood joint – fronting the modest 45-seat lounge is Xavier Herit, who spent seven years as head bartender at Daniel, and chef Jared Stafford-Hill, an alum of Adour Alain Ducasse, and Maison Premiere.

To deem the drinks list ‘creative’ is probably an understatement: Herit has put together a wild mix of house-blended spirits including pineapple- and chipotle-infused vodka, Earl Grey-infused gin, and Kaffir lime- and oolong tea-infused cachaça. The overall edit also includes some killer combinations like the Père Pinard, a mixture of pinot noir syrup, scotch, pear brandy, and all-spice bram; or Herit's twist on the Moscow Mule, a carbonated gin-n-ginger Tête de Mule made with spicy jalapeño mezcal. Meanwhile, robust bistro fare such as chilled oysters, scallop ceviche, black sea bass crudo, beef short rib, and a diverse cheese and charcuterie board will keep you on the straight and narrow. But with an 11-strong cocktail menu, plus a not insubstantial array of wines, there’s no time to sit on your laurels – Herit completely overhauls the food and drink menus seasonally.
