The Butterfly

One of the most prolific, buzzed-about chefs on the Stateside scene right now, Michael White has yet another New York restaurant to his name – this time a supperclub-style Tribeca offering, which follows SoHo steakhouse Costata  and casual East Village pizzeria Nicoletta, both of which opened in the last year. Dubbed The Butterfly, this is White’s first departure from Italian cuisine into a cocktail-focused concept that partners with renowned drink designer Eben Freeman to deliver a beverage program as solid as the chef’s comfort-classic American menu.

The mod-meets-retro salon, with its wooden ceiling fans, yellow banquettes, mirrored walls and black marble bar, is a prime perch for Freeman’s inspired Old American libations. The brandy Old Fashioned (with Korbel, Cryo-vac Oleo Saccharum, maraschino) is an ode to White’s home state of Wisconsin; the Whisky Sour (Old Forester bourbon, McClure’s maple, angostura) is a tribute to Freeman’s father’s favourite drink; and the Mai Tai (Garam Masala Brugal 1888 rum, Pierre Ferrand curacao, lime) pays homage to popular 50s tiki culture with the exact original cocktail recipe. Comfort rumbling tums with White’s cracked pepper pork rinds, buttermilk fried chicken, or good old NY Strip steak and fries. This is one very social Butterfly!
