It’s been said that a good chef is a lot like a composer, manipulating ingredients with both talent and timing to create a symphony of perfectly harmonised flavours. It seems fitting then that the latest addition to the West Village dining scene honours a sliver of the city’s musical heritage: New Italian restaurant Pagani is situated in the historic former O. Pagani & Brothers music shop space, and by all accounts restaurateur Massimi Lusardi and his supporting trio (designer Taavo Somer, chef Mark Barrett and beverage consultant Sean McClure) are hitting all the right notes in their elegant first movement.

Keeping many of the store’s original interior details intact, Somer’s charming fit-out melds paint-peeled walls and drop-beam ceilings with vintage tiling and a streaked-marble bar that simply begs guests to pull up a stool. The menu standouts are unquestionably the housemade pastas, but alongside the braised rabbit rigatoni and pappardelle Bolognese also stand tall slow roasted veal shoulder, folded chicken with dried figs, and a smattering of starters, salads and seafood. McClure’s (Daniel, Craft) drinks list features classic and musically-inspired signature cocktails including the Victrola with vodka, casoni, basil, bitter lemon and prosecco. Now that’s music to our mouth!
