To say that Dinner Lab founder Brian Bordainick was astounded to discover that all seats for the eagerly awaited New York debut of his social dining experiment were sold out in less than three minutes would be an understatement. But the craze continues to escalate, and while even the city’s savviest concierges are having difficulty bagging a place at these exclusive supper shindigs, the waiting list for club membership is now reeling off into the thousands.

So what’s all the fuss about? Well, Dinner Lab’s ‘once in a lifetime’ events, held twice weekly and at an undisclosed location, aim to showcase undiscovered, up-and-coming culinary talent who tell their own story through a series of recipes that they hold dear. Past venues have included an abandoned church, a deserted pier and an unused warehouse, and past cuisines have varied from Vietnamese, to Southern comfort, to Italian. But with each chef and every venue only being called upon once, the experience is new and unique every time. Take the inaugural New York seven-course Colombian feast cooked up by Mario Rodriguez (Fatty Crab, Gramercy Tavern) and served in a desolate seaside shopping mall – that will certainly never happen again!
