Already famed for their modern cuisine at New York diners Torrisi and Parm, power trio (co-chefs) Mario Carbones, Rich Torrisi and business partner Jeff Zalaznick finally opened the doors to their long-awaited Ameri-talian diner Carbones in March 2013. With its 50s-era, ‘Godfather’-inspired decor of monochrome-tiled flooring and leather-backed chairs, the Greenwich Village eatery is brought into the C.21st via its lively soundtrack, Zac Posen-designed burgundy-vest and tuxedo uniforms, and the Vito Schnabel-curated contemporary artwork lining the navy walls.

Sate your pre-prandial thirst with the house-infused limoncello and grappa, or try a craft or classic cocktail like the standout Old Fashioned with apple brandy, orange and bitters, then browse the extensive menu for a wide seafood selection beginning with antipasti like octopus pizzaiolo. Choose from mains including lobster macaroni with spicy cream and sweet onions, linguini with three types of clams and topped with sweet-onion soubise, or the sea bass vino rosso. Meat-lovers can opt for charcoal-grilled specialties like cherry-pepper ribs, and tender veal parmesan with a crispy, tomato-topped crust.
