Back in August, Manilan sweet-lovers (and dentists) wept tears of dismay as Fort Bonifacio’s divine artisan patisserie Gourmandise switched off the ovens for the last time. Pastry chef Sunshine Pengson’s éclairs were the stuff of legend, and fans were left adrift without a go-to shop space for their regular fix. Sure, Sunshine and husband Robert’s degustation fine-diner The Goose Station is still going strong, but an easy éclair access point it is not. Thankfully, these were trying times of the past.
 
A few months later, salvation arrived in the form of the couple’s latest venture, Shine Bakery & Café – a bigger, more comprehensive offering than the former Gourmandise; casual, but elevated with shades of TGS’s trademark creative gastronomy. While the duck egg blue, white and candy cane-striped décor feels fun and inviting, more tempting still is the menu, featuring burgers, salads and Philippine-inflected dishes – think umami fries coated in crusty parmesan and topped with sesame nori, chorizo rice served with slices of tender pork belly and apple shavings, and a cheese-slathered Angus beef ‘fondue burger’ on a buttery brioche, promising to ruin any and all diets in its path. And best of all, you’ll find Sunshine’s myriad sweet treats, like a reincarnated Gourmandise counter churning out batch after batch of the salted caramel, praline, and raspberry éclairs and cupcakes that were so missed. Shine on, Sunshine!
