Makati’s Secret Cocktail Bar

May 01, 2017
Rambla + La Coctelera

You can now pair your tastebud-tantalising tapas with creative cocktails in Manila as elevated Catalan diner Rambla in Rockwell has unveiled its much-hyped, not-so-secret speakeasy, tucked away on the second floor. Say hola to La Coctelera!

Makati may be a long way from Barcelona’s famous main avenue La Rambla, but this dynamic duo will ensure plenty of Spanish seduction. The white, bright upstairs cocktail bar sports a pretty-patterned tiled bar with welcoming high stools, plus comfy seats and banquettes around intimate tables, backdropped by pale cabinetry, pendant lights and whirring fans.

Mixologist Michael Tubiera heads up the cocktail-shaking team, taking inspiration from the venue’s hispanic roots. For a refreshing drink, try the iced Sparkling Fancy Sangria, a Spanish summer classic made with sparkling Lambrusco wine for fizzy effect. An innovative hybrid is the Te Negroni, whipped up from tea-infused gin, or get your rum on with the Jerez Cobbler, a fruity long drink combining strawberries and cucumber. Typically offbeat is the Bloody Maria Fresca, a sour mix of tomato juice and basel, sprayed with liquefied Parmesan cheese. Or, for a booze-free offering, order the Sicilian Limonata, including lemon and lime soda, garnished with almonds and swirls of lemon rind.

All La Coctelera’s drinks work well with Rambla’s tapas, whether you order the pulpo (octopus) hummus with smoky, sweet paprika, olives marinated in olive oil, or salmon, brie and truffle oil baguettes. ¡Salud!
