Madrid Fusión Manila

Go gaga for gastronomy at Madrid Fusión Manila, the foodie event that brings a feast of top global chefs to town for three days in April. Anticipated by industry types, restaurateurs, food bloggers and amateur cooking fans, the annual gathering returns to the Metro for a second Instagrammable year.

MFM is the only Asian edition of respected congress Madrid Fusion, which explores avant-garde cooking. 2016’s theme is ‘The Manila Galleon: East meets West’, a homage to the 450th anniversary of the galleon trade linking Asia and the West. Check out the food and drink exhibits, or register for the congress to enjoy talks, savour cooking demos and discover new food trends.

Hispanic speakers from the West include Joan Roca from Spain’s El Cellar de Can Roca near Girona, Virgilio Martínez from Central restaurant in Lima, Peru, and Enrique Olvera from Mexico City’s Pujol. Expert chefs representing the East include David Thompson from Bangkok’s Nahm, Nurdin Topham from Hong Kong’s NUR and Yoshihiro Narisawa from Tokyo’s Narisawa. Philippines talents Michael Aspiras (Scout’s Honor, Le Petit Soufflé, Garde Manger), Myke Sarthou (Alab), and Amy Besa and Romy Dorotan (Purple Yam Manila) are also on board.

Regional lunches celebrate the finest dishes from the Philippines’ three main islands, Luzon, Visayas and Mindanao. Alternatively, book in for a Dinner with the Stars, featuring Marbella’s Michi-starred Dani Garcia or Kevin Cherkas of Bali’s Cuca. Yum!
