Gourmands rejoice! A feast of top global chefs is making a beeline for the Philippines, and you’re invited. The nation’s most important culinary event, Madrid Fusión Manila, returns to the SMX Convention Center for three days in April – the only Asian edition of the popular Spanish foodie fixture.

Anticipated by industry types, restaurateurs, food bloggers and amateur cooking fans alike, the annual gathering returns to the Metro for a third Instagrammable year, including the International Gastronomy Congress, Fusión Manila International Gastronomy Expo, and Flavours of the Philippines.

Inspired by the theme ‘Towards a Sustainable Gastronomy Planet’, MFM Congress brings together cutting-edge chef-presenters from Europe, Asia and the Americas, including lauded Londoner Simon Rogan (L’Enclume, Fera at Claridge’s), Julien Royer (Odette, Singapore), and Jordi Roca and Alejandra Rivas Gomez of Spain’s El Celler de Can Roca fame.

Trendsetting talks cover everything from new-Basque cuisine to Korean fermentation and sweet anarchy. Pros and amateurs register for the three-day ticketed event, which includes regional lunches presenting the best Filipino food from rice to nose-to-tail, plus corn and seafood.

Swing by the Expo to savour stalls touting gourmet products, inspiring tableware and kitchen kit, including coffee and bar tools (trade-only 6-7 Apr, public welcome 8 Apr). Flavours of the Philippines is a tasty month-long food and culture programme, spanning special Pinoy meals in restaurants, agri markets, festivals and tours (until 30 Apr). Disfruta!
