Le Petit Soufflé

If any chef worth their salt is able to rustle up the perfect omelette, then surely any patissier worth their pantry can whip up a scrummy soufflé? Top toque Miko Aspiras and his business partner Kristine Lotilla certainly think so, and are proving it with the opening of their newest eatery, Le Petit Soufflé, which serves up Franco-Japanese comfort fare with a focus on – you guessed it – the famously fiddly pud.

With crowd-pleasing craft cookie joint Scout’s Honor already under their apron strings, Aspiras and Lotilla are no strangers to Metro Manila’s sweet-scape, however at their new diet-damning den, they venture into savoury territory too.

Beneath pendulous rolling pins and sprouting greenery, tuck into Nippon-nuanced Gallic faves, including a sesame-encrusted tuna salad, croque monsieur and onion soup, as well as some straight-up Japanese dishes – just be sure to save space for afters as it’s the desserts that take centre stage.

Choose from a confection collection of parfaits, pancakes and soufflés in a field of flavours to suit all tastes, from earthy matcha to indulgent Valrhona. Although an early standout seems to be the dark chocolate soufflé with vanilla crème anglaise. Or, for true dessert devotees, the salted egg caramel parfait. Our advice? Dress appropriately, dear hearts, and leave the Hervé at home.
