With over a decade of experience under his belt, Gils Brault, founder of the world-renowned Trois Gourmands in Ho Chi Minh City, is nothing short of a haute cuisine maestro. So when Manila-based chefs Jonas Ng and Hasset Go decided to launch a Gallic kitchen in Manila’s go-to culinary hub Bonifacio Global City, they knew right away the celebrated chef was their number one pick for partner. The rest, as they say, is history, with the trio’s laidback-meets-upscale concept Le Jardin just launched in the Philippine capital, in a pretty penthouse-level space replete with vertical garden, white patio chairs and dark wooden tables.

A dinnertime visits affords the opportunity to sample 4-,5- or 6-course menus, all kicking off with  a truffled egg amuse bouche, followed by starters including citrus-y crab tartar, and escargots with garlic butter. An icy lemon palate cleanser precedes the mains, which span slow-cooked, foie gras-stuffed pork belly, and swordfish with red wine reduction. House-made cheeses follow, and finally dessert arrives in the form of chocolate ice-cream profiteroles, or crème brûlée with a perfectly crispy, caramelised crust. Select your accompaniment of choice from the wine list highlighting labels from small, independent vineyards such as Domaine de Lery, Chateau la Calisse and Cellier des Demoiselles. Simple et magnifique!
