Any gourmand worth their Himalayan rock salt will readily reel off the names of the world’s most acclaimed head chefs. They might even be able to identify a sous chef or two.

However, the humble chef du partie (despite being as integral to a dish as the pots and pans it’s prepped in) rarely gets a mention. Not so at Rockwell Center’s retail-breather, Chef du Partie, which has been named after the oft-overlooked but essential member of the kitchen company.

Conceived by three major players on Manila’s cui-scene – Malou Fores (Mamou), Katarina Kuhn-Alcantara (Mesclun) and Kristine del Gallego-Locsin (Lu) – CdP invites diners to join its ‘global table’, inspired by the flavour play of European, American and Filipino cooking.

You’ll be clamouring to park your posterior on one of the sought-after seats. Baroque-inspired details, from ornate ceilings to cutesy chalk designs, combine with contempo polished concrete walls and a floor-to-ceiling glass front to ensure the intimate space is always welcoming.

However, what’s kept this cosy bolthole buzzing since it opened last autumn is the fab international fare. Standouts include the fresh and lightly battered fritto misto, the indulgent truffle maccheroni (made with real-deal white truffle paste), and the Maine lobster vongole.
