From Bangkok to LA, and Paris to Chicago, food and wine lovers are spoilt for choice when it comes to enjoying excellent cuisine paired perfectly with equally delicious wine. But what if your tastes tend more towards the precision mixed than the vintage poured? Well, if you’re based in or visiting Hong Kong, your horizons just expanded with the opening of The Woods, a clever new cocktail bar-cum-restaurant where the convention for pairing eats with drinks is challenged in a most exciting way.

In a dimly-lit, 2,000 sq ft lounge of plush furnishings, rustic tree branch accents, wood-beamed ceilings and exposed Edison bulbs, sisters Victoria, Regina and Juliette Chow deliver a 4-course prix fixe that pairs their most popular cocktails with a menu of corresponding small plates. Via reservation and bar seating only, guests can try the likes of the fresh Gin Basil Smash (Sipsmith Gin, Thai basil, lemon juice and simple syrup) alongside a watermelon, feta and basil salad, and a meaty Bacon Bourbon (bacon-infused Michter’s bourbon, maple syrup, five-spice powder, lemon juice and egg whites) with an equally rich plate of roasted bone marrow. The greater lounge area is open for a la carte drinking and nibbling, with sips like the Fizzy Cucumber Gimlet (Farmer’s Organic Gin, fresh cucumber-mint juice, Chase elderflower liqueur and citrus juice) and snacks including guacamole and chips, candied bacon rashes, and skillet-baked cookies available to mix and match. The new perfect pairing!
