De La Rue, À La Table!

In a city such as Hong Kong, where art vernissages and restaurant openings abound on a monthly basis, newcomers must arrive on the scene elbows-out and guns blazing to really make an impression – and Bibo, a new French fine dining concept tucked off Hollywood Road, certainly attempts that with characteristic Gallic gusto. The corner spot’s Art Deco setting has been overlaid with a colourful cache of edgy and loud street art, including canvasses, murals and installations from a not unimpressive lineup of modern artists: Banksy, Jean-Michel Basquiat, Damien Hirst, Daniel Arsham, Jeff Koons, Shepard Fairey, Takashi Murakami, and Yayoi Kusama.

Chef Mutaro Balde (Plaza Athénée, L’Atelier de Joël Robuchon), meanwhile, aims to bring other senses into play with classic French plates like foie gras with grenadine-poached rhubarb; a fig, artichoke and asparagus salad, topped with a poached egg and truffle vinaigrette; Australian wagyu beef tartare with triple-cooked fries; and sharing plates simply monikered ‘le boeuf’ (for two) and ‘le poulet’ (for three). Behind the bar, mixologist Alexandre Chatté skilfully concocts the forgotten classics, such as Dr. Ordinaire’s Elixir mixed with Gvine, Gentian, Ruinart Blanc de Blanc Champagne and a dash of yuzu and absinthe (an ode to the Parisian Bohemians of the 1930s), and the Colonial Cooler made with gin, Grand Marnier, red vermouth and North African Picon bitter.
