From Breakfast-Only to All-Day Dinner

Pardon the pun, but well, newcomer diner The Winchester is indeed going from win to win – it launched in February as a breakfast and brunch-only eatery with a focus on peddling some of the city’s best beans (namely local artisan roasters Metric Coffee), but quickly proved so popular that it expanded to include an all-day and dinner menu – and now, two long, dry months after opening its doors, the Chicago bistro has debuted the all-imported cocktail to service to pair. About time, too!

Partners Chris Pappas and Dan Sheehy have welcomed mixologist Peter Vestinos (BellyQ) to the fold, and he’s created the immaculate cocktail program to match the pared-back diner atmos. Given the quality of the java here, it’s no surprise that we particularly like the coffee-infused ‘Cold Stare’ with Mezcal, Amaro, raspberry liqueur and walnut bitters; alternatively the ‘Timepiece’ with junmai sake, amontillado sherry, bianco vermouth, and orange bitters is an early crowd pleaser. Sip and sample the menu from chef Greg Bastien (Perennial, Tavernita), which features ribs and eggs with fingerling potatoes at breakfast, classic BLTs and chickpea wraps at lunch, or arctic char with parsnip puree, cipollini onion and toasted garlic at dinner. It’s 5 o’clock somewhere!
