Southern-Style Gastropub

May 22, 2014
Dusek’s

Crowned Chicago Magazine’s Best New Restaurant 2014 just last month, Dusek’s Board and Beer has catapulted from simply being ‘hugely popular’ well into the foodie stratosphere. And it’s no surprise, given the hotspot’s credentials include chef Jared Wentworth and restaurateurs Bruce Finkelman and Craig Golden, a.k.a the team that gave us Michelin-starred Longman & Eagle. Housed in the storied Thalia Hall, the celebrated gastropub tips its cap to the structure’s heritage, both by paying homage to the tavern’s founder Dusek, and in its Romanesque décor, featuring ambient exposed brick walls, stamped tin ceilings and original brass chandeliers.

With Wentworth helming the kitchen, it’s safe to expect inventive Southern flavours: the house ‘Juicy Lucy’, with its cheddar-stuffed beef patty, is far from your average burger; the ‘Hare Pot Pie’ cheekily lists ‘vegetables rabbits like to eat’ as ingredients; and ‘General Tso’s Sweetbreads’ arrives with roasted shisito peppers and pickled daikon. Pair with one of the 24 draft beers, including a Czech pilsner by Krušovice, blond ale from Israeli brewery Malka, and a strong dark ale from Quebec’s Unibroue Trois Pistoles. Or, for something lighter, try the Dusek’s Cooler cocktail with Becherovka, orange flower water and Czech Pilsner. And that’s all before we’ve even gotten started on the rave-busy brunch service…
