Lincoln Park’s rapid gentrification is all but unstoppable right now with an already expansive collection of novel nightspots growing at seemingly lightning speed, from upscale diner Eleven Lincoln Park, to slick sushi house Juno, to swinging new golf simulator/resto-lounge Fairways. And into the fray now steps Coppervine, a serious, yet accessible take on the beverage pairing concept, where the marriage of food and drink ascends to nigh on divine importance.

Just Grapes owner and sommelier Don Stritong’s first perfect match was of himself with chef Michael Taus (of Zelaous fame), and following soon after came Taus’ all-American small, medium and large plate menu with each classic dish recommended alongside a wine, beer and cocktail accompaniment. Maine lobster mac & cheese sits tastily beside a Qupe chardonnay, Wipeout IPA or ‘Brown Butter’ Old Fashioned, while braised Berkshire pork shoulder is served with artichokes and cinnamon, as well as your choice of an Aquitania Reserva red, Solitude Abbey ale or ‘Smoke & Mirrors’ cocktail blending Monkey Shoulder blended malt, St. Germain, egg white and whiskey barrel-aged bitters. Flatbreads, cheeses and charcuterie all come with suggested partners, or the challenge is thrown down for you to create your own perfect coupling. Though fun and innovative Coppervine is decidedly free of staff and sounds of the ‘so-hip-it-hurts’ persuasion… some things are sacred after all.
