Unlike the whistle and bells openings standard in Chicago’s F&B industry, the multi-storied cocktail den Celeste launched comparatively quietly in February, billed as an astronomy-inspired bolthole from the Hindo brothers Nader, Fadi and Rafid, and occupying two floors fitted with exposed brick walls, gold leaf ceilings and marble top tables. But despite its barely publicised beginnings, Celeste has quickly become the talk of the town, packing in the locals nightly thanks to its quirky vision and impeccably-crafted tipples.

On the ground floor, Sable Kitchen & Bar’s Freddie Sarkis mixes up concoctions that adhere to the celestial theme – there’s The Constellation with Ron Matusalem Platino Rum, Oloroso Sherry, strawberry and citrus; the Roman Candle Fight with Pimms Cup No.1, Control Pisco and house fruit mix; plus unique bottled and draft blends like the Golden Filigree with Remy VSOP cognac, Plantation dark rum, ‘very old’ Barton bourbon, and milk whey. Upstairs in the glam Deco Room, Whistler’s Sterling Field prepares an extended program with more creative cocktails including recipes sent in by bartender buddies, like Alex Skrien’s (from London’s the well-known ECC Chinatown) aquavit-based Stockholm Syndrome. Pair with chef Aaron Lirette’s bar bites, and finally head upstairs to the rooftop garden for a closer look at the constellations.
