Chicago has its fair share of quality bakers, from the hearty, rough artisanal breads to be inhaled at Cellar Door Provisions to the whimsical tea-time delights of A Baker’s Tale, and lest we forget, the holey revelation that took the Windy City by storm, The Doughnut Vault. However, never ones to loaf about, husband-and-wife duo Dave and Megan Miller (of Bang Bang Pie Shop fame) have braved the busy scene with their own take on the perfect grain, Baker Miller Bakery & Millhouse.

You’ll need to arrive early to nab one of only six tables in the bakery’s bright, whitewashed and blond wood space, filled with colourful chairs and the irresistibly warming aroma of fresh-from-the-oven fare. With perch secured, choose from a concise all-day menu of standouts such as grits with cheese and slow-roasted beef, pickled cabbage slaw, herb oil and egg; or a Plowman’s Breakfast of soldiers, soft boiled egg, black pepper bacon-sausage links, dressed arugula and jam bar toppings. Meanwhile for those on the go, there’s a seasonally-changing array of moreish muffins, sourdough cinnamon rolls and savoury pies. And if you’d like to try your own hand at kneading a delicious dough, pick up a bag of their small farm-sourced organic grains, in-house rolled oats, ground flour and grits. Oat-some.
