Faff-free Sushi

Say ‘sushi’ in the US and it generally conjures visions of huge, complex maki rolls containing everything but the kitchen sink, open plan counters and conveyor belts with chefs who double as entertainers, and all manner of fusion dishes that all too often bear scant resemblance to true Japanese cuisine.

For renowned chef Kazunori Nozawa, this lack of simple, authentic sushi proved to be the perfect opportunity for his back-to-basics ‘Trust Me’ menu ethos, and from 1987 to 2012 he deftly filled the niche at his famed Studio City restaurant Sushi Nozawa.

The enormous success of Sushi Nozawa led the chef, his wife Yumiko and son Tom to take the plunge for expansion and launch the SugarFish by Sushi Nozawa brand, which with the recent opening of its new Beverly Hills branch now numbers 6 restaurants around town.

The stylish DEX Studio-designed blond wood and parquet Beverly Hills outlet features all the signature Nozawa touches like house-produced soy sauce and ponzu, along with flip-fresh but flash-free sushi at affordable prices, but with one ‘secret’ addition – a 10-seat omakase-style reservation-only dining bar with a set 20-course market driven menu.

This being a faff-free zone, be warned, no dietary requirements or substitutions are entertained at the omakase bar, but then, you are in the deliciously experienced hands of the infamous ‘sushi nazi’ Nozawa. Eat!
