With aroma undoubtedly one of the most crucial and indicative aspects of flavour and cooking, it’s rather surprising that a restaurant with a specific focus on fragrance hasn’t already found its way onto the global dining scene. But given Thai recipes and ingredients have a reputation for possessing strong olfactory identities, it seems fitting that Perfume Fragrance Bar & Aromatic Cuisine should open in Bangkok of all places, bringing with it to the fore the fragrant obsessions of its 3 owners (a mixologist, a chef, and a shisha fan) and the inventive creations borne thereof.

To match its innovative philosophy, the venue has been fit out with a contemporary, industrial-tinged interior of exposed ductwork, hanging bulbs, and steel shelving, plus a handful of alfresco tables spilling out onto burgeoning hotspot Soi Thonglor.

Molecular techniques are employed to successful ends both on the plate and in the glass, with the ex-Sofitel chef dishing up artful renditions of tuna tartare (with mango jelly spheres and a perfume bottle of tangy lime dressing), roasted meats with balsamic-injected raspberry sides, perfectly grilled squid with garlic, and dark chocolate cake crumble topped with gold flakes and infused with strawberry smoke. Round off with cocktails at the long granite bar; the Bubble B52 comes deconstructed as three separate balls of Baileys, Grand Marnier oil perfume flambé and Kahlua, while the Rose Garden arrives via a vaporous beaker.
