Anyone who has travelled to Thailand will know that the country’s cuisine goes far beyond the ‘green curry’ cliché and is, in fact, a huge confluence of many regional traditions and tastes – a fact that young expat couple Liu Xi and Richard Emden had in mind when they coined the term ‘Siamisation’ for their innovative new dining concept, Rock. This new Thai restaurant, set in up-and-coming Ari over an elegantly monochrome 2-storey house, groups together not only the flavours of diverse areas and periods in the country’s cooking history, but also brings in influences from nearby Myanmar, India, and China.

Using seasonal and locally sourced ingredients, chef Baimohn Tanataveetram (Nahm) turns out old-school dishes with a modern slant, like blanched banana blossom salad with smoked duck ham, warmed coconut and dried chillies; homemade pandan noodles with blue crab curry; and even locale-specific offerings like charcoal-grilled Northeastern beef sausage, the technique for which staff learned during trips to the region. Desserts continue in the same vein with pretty-as-a-picture plates like palm cake dipped in caramel, shredded coconut, and chilled passion fruit, or milk pudding covered in ginger biscuit crumble with an organic rose compote. Meanwhile, cocktails like The Kunming Tourist Trap, mixed with gin, rose jam, passion fruit and Chinese tea, were designed by Bangkok’s brightest barkeep, Joseph Boroski. Cin cin!
