While the literal translation of teppan (iron plate) yaki (grilled) is clear, its origins are shrouded in mystery. What is clear, however, is the growing open kitchen trend in the West has been part of Japanese culinary tradition for decades and nowhere is this more amply demonstrated than the teppanyaki grill. The specially trained chefs while ensuring perfectly cooked food, must also entertain the diners sat around them with nippy knife skills and twirling utensils, the swift and deft grilling and flipping of food resulting in ultra tender and juicy morsels. As theatrical as it is delicious, there are no shortage of teppanyaki options in Tokyo, but here are our favourites...
If you’re hankering for a high-end experience, we recommend Roppongi’s Omae XEX, a cool dark space with only two circular 10-seater counters where a chef grills tender cuts of meat to perfection, including the very highest grade of Kobe beef. As testament to the skill on show here, the kitchen uses a hand-powered slicer that turns out pieces of meat so thin (0.1-millimetres) you can see through them! Or, for a good and honest post-work supper, Teppanyaki Ten in Ginza hits just the right spot with a set menu including grilled sea urchin in seaweed, Takoyaki octopus balls, and potato and Mentaiko cod roe.
