Reading about the Bohemians is one thing, but if you really want to get inside the minds of literary greats such as Baudelaire, Wilde or Hemingway, why not sample the tipple that fascinated them? For Tokyo offers not one, but two dens devoted entirely to absinthe, with bars Tram and Trench touting an astonishing collection of the legendary liquor infused with botanicals, green anise, sweet fennel and medicinal herbs, plus a whole wall of curated bitters and a tongue-in-cheek selection of ‘Dangerous Bottles’.
Lovingly developed by absinthe aficionados Takuya Itoh and Rogerio Igarashi Vaz, Trench is counter-only with a small stage for live music, while its neighbour Tram boasts a larger space with tables, plush velvet chairs, and walls lined with well-thumbed books and antique portraits. Absinthe-based cocktails, such as the Smokey Speakeasy with whiskey, Galliano and chocolate bitters, serve as a mellow introduction to the spirit, while their finest fare, namely Kublër or Esprit Edouard, is always served according to the age-old ‘French Method’ of pouring chilled water over a sugar cube and silver slotted spoon to release the absinthe’s herbal aromas. And if you are hell-bent on resisting the allure of the Green Fairy altogether, try wonderfully inventive alternatives like their minty mojito of artichoke liqueur and Abbott’s bitters.
