To say the view at dining and bar destination Kathleen’s Waitan is spectacular is almost an understatement. Nestling north of the Bund on the roof of the old Sassoon opium warehouse, the panoramic view down river and across to the sci-fi skyline of Pudong would be breathtaking enough even without the expansive terrace that promises to be a stagger-glam destination come summer. One of the most distinguishing facets of this sophisticated set-up from savvy restaurateur Kathleen Lau is the full service bar, the work of vermouth and cocktail guru Giancarlo Mancino
, with its stellar list of old-style favourites including nostalgic delights like the Deshler, a formidable mix of rye whiskey, red vermouth, Pierre Ferrand dry curaçao and Peychaud’s bitters.
Behind the stove, chef Kenji Salz has crafted a supremely elegant global menu from neptune rolls and tempura soft shell crab, to dark Puy lentil soup enriched with leeks and chorizo, butter braised Boston lobster, sea bream with tahini and couscous, and Wagyu ribeye. The dessert sampler offers five sinful treats in one, or better yet, plump for a deliciously creamy Milk Punch nightcap cocktail of cognac, dark rum and sweet milk.
