Behind every great man is a great woman, so the saying goes, but in the case of the Bowery’s sleekest new watering hole-cum-restaurant Wise Men, there are in fact three fabulous ladies for good measure. S Magazine creative director Christina Chin, photographer Danielle Levitt and hospitality veteran Caroleyn Ng joined fashionable forces in February to deliver a bold, moody venue that not only tastes as good as it looks, but has also become the instant default situ for style-savvy meeting and toasting.
Taking its name from Chin’s parents’ now shuttered Chinatown steakhouse, Wise Men’s menu pays homage to the original with a decidedly meaty twang courtesy of Frankies 570’s head chef Ryan Barlow. The 18 share plates, including fried clam strips, pattie melts and lamb chops, are succinct and simple, with all adhering to a blanket ‘four ingredients or less’ rule. The faff-free concept also extends to the cocktail program, with consultant Acme’s Duane Fernandez Jr. offering up a concise list of just six classics, including a punchy Sazerac rendition featuring Old Overholt rye, Absinthe and Peychaud’s bitters. Far from simple though is the fitout by set designer Andy Harmon, whose vision comprises a 20ft marble bar, blood red ‘meat lace’ wallpaper, geometric flooring and sultry handmade lighting. Time to Wise up, people!
