As the average meat-eater is becoming increasingly aware of the heart-stopping side effects of an excess of juicy beef patties, crispy bacon and butter fried chicken, more have started to look for a wholesome alternative – perhaps not for a complete lifestyle overhaul but for an occasional conscience-abating break from meat.
And that is exactly what Manila artist Denise Celdran discovered when she started up her own vegetarian/vegan delivery service Edgy Veggy 6 years ago – that many of her clients were not in fact vegetarians, but meat-eaters in search of a healthy balance. And off the back of this growing health awareness, Celdran has finally opened her first brick-and-mortar establishment, a compact, bright and colourful café on Brixton Street.
Edgy Veggy’s focus is still on low-calorie healthy food with dishes like tofu steak cooked à la Japanese with vegetable gohan and radish pickle, or à la Korean with mushroom bulgogi and spicy bibimbap rice. But the new café’s real crowd-pleaser is proving to be the rich mushroom burger patty with caramelised onions, spinach, and mushroom tapenade generously packed into a panini-toasted ciabatta. And if you just don’t have time for a sit down meal, Edgy Veggy even sells freeze-dried, foil-packed food and ready meals for calorie-counting foodies on the run!
