A must-try for juniper lovers, Origin, the Hong Kong bar focused predominantly on gin has carved a neat little niche for itself on Central’s happening Wyndham Street. The first of its kind in Asia, the bar is helmed by Charlene Dawes (known for Tastings Wine Bar and Angel’s Share Whisky Bar) with local mixologist Antonio Lai crafting the cocktails (the genius of which lies in the culinary methods used to create them, like a rotary evaporator for redistillation plus a water-bath and vacuum for slow-infusion).
Despite over 40 types of premium gin on offer, there are of course other spirits for non-gin drinkers too, plus a sultry interior featuring high ceilings, check-printed upholstery, and exposed brick walls.
But it’s the house redistilled gins that have really put Origin on the bar map, with 12 distinct flavours ranging from lemongrass, grapefruit and cucumber to coconut or ginseng, all of which can be served the classic way simply with a splash of tonic. Alternatively, opt for a slow-infused Earl Grey Martini, a Negroni featuring Beefeater gin aged for three months in a bourbon cask, the Remedy with chamomile gin and homemade tea cordial, or the signature Basil Smash, combining basil bitters and egg whites with syrup and basil gin.
