While elsewhere in the world the drinkertariat have fully embraced the concept of premium label, artisanally-sourced and custom-made cocktails, Hong Kong until recently can’t really be said to have been in the vanguard.
All that has happily changed with a small, but beautifully crafted selection of recent bars opening, usually very low-key, and nowhere more so than at Butler, a quiet 20-seat boîte hidden in a nondescript building an easy, breezy 10-minute stroll from The Peninsula. As always, it’s best to ask your concierge to call ahead.
Naturally there is a drinks list, in fact a terribly good one, but for something a little different, do what we do, and leave yourself in the capable hands of master bartenders Uchida Masayaki and Nick Tse, both dapperly clad in white dinner jackets. Simply tell them your likes and dislikes and they’ll create a perfectly balanced, bespoke, pleasure-enhancing elixir before your very eyes.
Fruit-based drinks feature, such as the shisho mojito, made with shiso-flavoured liquor and Japanese grape, but with over 200 spirits on offer, the only limit is your imagination. What’s more, the ice is hand-chipped, mixers are house-made and there’s a small yet tasty snack menu. A $200 per person minimum charge applies, but with drinks this good it’s highly unlikely you’ll be sampling only one. Kanpai!
